Easy to make and serve , these can be prepped ahead and Air fried when ready to eat.
There are so many ways to stuff these mushrooms. Here I have made a simple vegetarian stuffing with peppers, onions, ginger garlic, bread crumbs , seasoning and lots of Vegan Cheese.
Air fried and ready within minutes , Entertaining shall be a breeze. Serve them on a platter as Finger Food or as Salad Course in a Sit down meal.

This recipe of stuffed Mushrooms is made with lots of vegetables. I have actually tried so many different stuffings . This Stuffed Cheesy Mushrooms are really the best.

While preparing the stuffing I used a medley of red , yellow and green peppers.

Onions and Spring onions add a ton of Bite. Ginger garlic and seasoning. I also added celery. With so many vegetables used and very little breadcrumbs, this recipe is very healthy vegetarian recipe. Air fried to make it even better.

This recipe is made vegan by adding a Plant based Cheese ( cashew /almond ). It can also be made gluten free by avoiding the Breadcrumbs, Use Gluten free Panko.

Which varieties of Mushrooms can be used for making these Stuffed Cheesy Mushrooms?
I prefer using medium mushrooms to make these Stuffed Cheesy mushrooms.
Since we like to serve these as finger food. White mushrooms, Baby Bella work very well . Portobellos are too big .
Incase you would like to serve these as a side for Sit down dinners, you could use Portobellos. This recipe I have used White mushrooms. Just enough cavity to stuff and perfect for Finger food serving .
How to clean and Prepare the Mushrooms for Stuffing?
It is very important to clean the mushrooms and stuff them well with the filling that you have prepared for.

We need a lint free kitchen towel The Cheeky panda (eco friendly, sustainable, biodegradable) Just lightly wet the kitchen towel and clean the mushrooms caps using a light hand, to remove any residual dirt.

Pop the stem from the cavity , lightly snapping motion is enough.

You can reserve the stems , these are excellent in soups, curries too.

Baby Bella mushrooms sometimes have gills (or fins Whatever you call them ) which taste bitter sometimes. You can use a tea spoon to remove these from the cavity.

White mushrooms – I use the caps as is, the cavity is great for stuffing with whatever you wish to fill in the cavity.
Can you freeze these Stuffed cheesy mushrooms ?

Oh Absolutely!! You can make these Stuffed Cheesy Mushrooms ahead of time before a party or for Weeknight meal and freeze them.

Stuff the mushrooms, but don’t air fry them. Freeze them in a try, and once frozen you can transfer them to a Ziplock bag and store them for up to three months.

You can refrigerate the Mushrooms for 12 hours before a party . Stuff them and cover them with a cling wrap.

These Stuffed Cheesy Mushrooms can be made using any stuffing that your heart desires. Cheese, Walnuts and Cream cheese, Vegan cheese and vegetables. This Particular recipe I have used vegetables, cheese and seasoning. A detailed recipe card is below . Nonetheless , a gist is here for quick reference.

Cleaned Mushrooms – I prefer using smaller mushrooms for they are good for finger food . Feel free to use any kind of mushrooms , which you like to.

Bell Peppers– I used a medley of colourful peppers. Red , Yellow, Green, Orange. I had visited the farmers market and was lucky to get some fresh produce .

Onions– Onion adds a bite to the recipe. If on a Keto diet you could use Spring onion instead , or even cabbage. It will give the bite minus the sugar.

Spring Onion– Freshness and Flavours are an integral part of this recipe. The green Onions add a crunch to this recipe . Double up just in case you are on a Keto . Believe me it is yummy!

Celery– I love the flavour that Celery adds in this recipe. You can always leave out the celery , if you do not like it.

Seasoning- Aromatics like Ginger , Garlic ,Chilly flakes, All Purpose seasoning , salt and pepper is all you need to spice up and make this the best Stuffed Cheesy Mushrooms you have ever eaten.

Cheese – This recipe is made with Vegan cheese. However One could use cream cheese, Parmesan . Mozzarella any other cheese . Cheese makes these mushrooms luscious and beautiful looking. Sharp cheddar could also be used. Homemade Cashew cheese or any dairy free , store bought cheese .

Bread Crumbs – American garden bread crumbs are used here. However to make it gluten free Panko use a number of varieties available on the stores shelves.
Instructions On How to make these Stuffed Cheesy Mushrooms in Air fryer.

Clean and wipe the mushrooms with a lint free kitchen towel. Never wash the mushrooms under running water. They tend to soak up the water and become soggy.

De -stem them (save the stems fro later use ) You could even dice the stems and use them in the recipe or reserve for later for soups or curries.

In a glass bowl or plate – place the mushrooms and drizzle oil over them . Since we are air frying the mushrooms we need to add any neutral oil to get a glaze .

For preparing the stuffing Use a medium bowl ,add the mixed diced peppers. These give a beautiful colour as well as crunch to the stuffing.

Next add the diced onions, any onion works well for the recipe. If you are on a keto diet . kindly use Spring onions or cabbage . The recipe tastes exactly same with cabbage. ‘Believe me”.

Now add the Spring onions. Again I love the colour and crunch. Incase you are not a green onion fan do leave them out.

Next add Diced Celery to the bowl. Celery imparts a unique flavour to this Stuffed cheesy Mushroom recipe. Along with cheese and mushrooms , celery is a fantastic combination.

Add the Ginger garlic mice to this .These aromatics are an integral part of the recipe. They enhance the flavour of the dish and also give it a zing.

Now add the seasoning Mix , a blend of salt , pepper, all purpose seasoning and chilly flakes is what I love in this recipe. The All purpose is a mixture of various herbs .

Next add the Bread crumbs . If you are on a gluten free diet and wish to omit the bread crumbs you can totally avoid this step. Use Crushed walnuts, Pine nuts, or Gluten free Bread crumbs to get the desired texture.

Its now that you add the Grated Cheese mix to this bowl. Reserve a little for garnish . I sometimes prefer to use ready shredded cheese mixes.

Give this a light stir to mix the seasoning and ingredients together.

Using a small spoon , take about a small lime size stuffing and place it in the cavity of the cleaned mushrooms. These mushrooms are smaller in size and are appropriate for serving as an appetiser.

Place the trivet in the Inner pot of the instant Pot or Multi pot.

The Air fryer basket could be lined with a parchment .

Or directly place the stuffed mushrooms on the Air fryer basket.

Close the Air fryer Lid and Air fry at 180 deg C / 350 deg F for 4 minutes.

Keep an eye out. Add a little extra cheese to the fried mushrooms to get a nice melted cheese coating over the mushrooms.

Close the lid and cook again for approximately a minute , just to melt the cheese.

The mushrooms are cooked and ready to eat.

Notes
- Do not wash the mushrooms. Washing makes the mushrooms soggy . Mushrooms tend to absorb any liquid.Just wipe them clean with a kitchen towel.
- Use cashew cheese or any store bought vegan cheese.
- Reserve a Little Cheese to give a melted cheese covering on the mushrooms.
- Incase of gluten allergies, either skip the Bread crumbs, or use Gluten free Bread crumbs.
- Make this your own recipe. Make the stuffing with pantry staples. You could use Walnuts , cream cheese, bacon, ham.
