A hearty , Satiating bowl of goodness , loaded with vegetables, pasta, beans in a tomato broth. 

This Italian Classic soup is my All time favourite Minestrone Soup recipe. 

Olive Garden , a restaurant in USA where i was introduced to this soup for the first time. Believe me I was ‘HOOKED ON ‘. No turning back This one is my Favourite.

Make a Gluten free Minestrone Soup .

 

You Most certainly can make a Gluten free Version of Minestrone Soup. Just Swap the pasta with a Gluten free variety. Quinoa Amaranth ,Red rice pasta.

This recipe  works well  for any non gluten free pasta as well , Fusilli Conchiglie , Rotini , Farfalle !

What Kind of vegetables can be used in this Minestrone Soup Recipe ?

 

This soup is basically a garden of vegetables . You could use any vegetables lying in your pantry . Zucchini , Peppers, Celery, Squash , Onions, Carrots.

 

Creating a medley of Texture and flavour.

Aromatic Tomato Broth along with vegetables,  beans and pasta make this a One Pot Rush hour meal.

Can This Minestrone Soup be made on a Stove top?

 

This Soup can be most certainly be made on a Stove top. You can use a large Soup pot. Sauté the vegetables in oil , add canned beans or beans can be boiled or pressure cook the beans to ease the process of cooking.  I prefer to add cooked Pasta when doing a stove top soup. This one pot meal can be made easily on stove top too.

 

I have made this soup in an electric pressure cooker Instant pot, Mealthy or any brand makes cooking a breeze.

Ingredients for the Minestrone Soup Recipe-

Detailed Ingredients with measurements can be found in the recipe card below . You can even find a detailed recipe instructions with pro tips along the way.

 

  • Onions – Chopped red or yellow works just fine . The onion adds a layer of sweetness to the recipe. Any kind of Onion in your Pantry works fine too. Shallots too are fine incase you do not have any onions.

 

  • Garlic – Italians love their garlic . I love it too! Garlic is an aromatic freshness to the tomato broth.

 

  • Olive Oil – I love to add Extra Virgin olive to this soup . Just gives a layer of aroma and taste of Italy.Easily available on Amazon , this is a pantry staple.  

 

  • Vegetables – An Array of vegetables can be used in this particular Soup. I personally like to use anything thats lying in the pantry. Colourful peppers, Red , yellow, Green , orange.

 

  • Celery- It is a flavour enhancer. Add the stalk to the sautéing garlic and onions and build a soup like or lets say better than the restaurant.

 

  • I also add  Yellow Squash , Zucchini, Carrots , green beans too. The choice of vegetables is totally up to you. Frozen vegetables work well too. So go ahead and make the most out of your pantry staples.

 

  • Tomatoes –  Tomato could be diced , canned tomato Purée or homemade . I prefer to use homemade . It only takes a few minutes to grind the tomatoes . Canned Tomatoes work amazingly well, but do read the labels to avoid any preservatives or added salt and sugar.

 

  • Seasoning- All purpose seasoning is used in this Recipe of Minestrone Soup.  The Seasoning is a blend of herbs, garlic , pepper and salt. Make life easy and use this to season vegetables, soups, broth, Chicken, meat . Available on Amazon , my pantry always has this All purpose seasoning or The Herb de Provence.

 

  • Pasta-  Any kind of Pasta are absolutely fine. I use whatever is lying in my pantry. Elbow, fusilli .The Chickpea pasta is also a wonderful variety to use . Please feel free to use any kind lying around or go ahead and plan the Minestrone Soup  .

 

  • Beans – Love canned beans like Lima, white Canellini beans to make the soup protein rich. You can totally avoid this ingredient  if you are not a bean lover. You can however choose to add fresh washed and soaked beans. The cook time shall increase in that case.

 

  • Garnish with fresh Basil leaves, generous drizzle of olive oil and freshly shaved Parmesan.

 

 

Step by step of Minestrone Soup

    1. Start by Switching on the Instant Pot in sauté mode. 

    2. Once the Inner pot is hot.

    3. Add oil to the pot .Next add the  chopped onions , garlic and chopped celery stalks.  Sauté for about 30 seconds or so.

    4. Its now that we dump the vegetables . Begin with the peppers, red ,yellow , green .

    5. Next Add the chopped Green beans, Zucchini , Yellow squash to the pot.

    6. Now add the All Purpose Seasoning, salt if needed (avoid using if the All purpose has Salt). and Chilli Flakes optional again . Add if you like the extra kick.

    7. Now add all the tomato purée to the Inner pot . 

    8. Its now at this point that you add the uncooked pasta. Again any kind works fine.

    9. If the Tomato purée has enough water , it is not necessary to add water.  vegetable stock.

    10. Incase you use chopped tomatoes, add a cup of water or

    11. Cancel Sauté mode . 

    12. Switch on  Pressure cooker on Pressure cook mode for 4  minutes and quick release the pressure manually once cooking is complete. 

    13. You can alternatively use the Soup mode too.

    14. Add the Canned Canellini beans (optional)

    15. Serve hot with Grated Parmesan and torn fresh basil leaves.

Ingredients

  • Olive oil- 1 tbsp
  • Chopped Onions- 1/2 cup
  • Minced Garlic - 1 tsp
  • Chopped Celery stalk- 1/4 cup
  • Peppers- Any kind- 1/2 cup
  • Vegetables (Yellow Squash, Zucchini , Carrots, Green Beans )Use anything  - 1  cup
  • Tomato Purée - 2 cups
  • Water/ Vegetable stock- 1 cup  While using Crushed tomatoes do add 1 cup water. 
  • All purpose seasoning- 2 tsp
  • Chilli Flakes 1/4 tsp
  • Pasta- 1/2 cup
  • Canned Canellini Beans- 1/2 cup
  • For garnish
  • Fresh Parmesan cheese grated
  • Basil leaves

Instructions

Notes

The Minestrone can be made on the Stove top too.

Just follow all the instructions from Step 1 to 10.

Cover the pot and cook the tomatoes for approximately 5 minutes.

Add cooked pasta and beans

Serve hot.

Make Gluten Free Minestrone soup. Use quinoa /amaranth / red rice pasta instead of regular pasta.
