One of our favourite Thai dishes beside the Pad Thai  which we make in our Instant Pot. 

 

Thai Curries and Rice (Coconut Rice) make such a wonderful supper that Weeknight meals or even Weekend meals are a sure shot breeze.

Easy 1 Pot Massaman Curry Chicken-

 

The Ease of making this awesome dish is that the Massaman curry paste can be bought from the store . Most store bought Massaman Curry pastes are so delicious .

 

Like the Maesri brand Massaman Curry paste The taste is authentic and it can be found on Amazon , as well as your local Thai /Asian store.

 

You could even make this paste at  home using peanuts , galangal , garlic, cumin, nutmeg , cinnamon, clove, palm sugar etc. They also use fish sauce and shrimp paste. I have used the Maesri brand massaman curry paste

 

 

Easy Massaman Curry Ingredients

 

Make your own concoction-

 

Typically Massaman Curry is made with Beef.

 

If using beef, You will have to  increase the pressure cooking time to around 30 minutes.   

 

 

 

 

Vegetarian Massaman Curry –

 

You could make an amazing vegetarian Massaman Curry with vegetables . We have a family of mixed eaters , so i have made a delicious Vegetarian Massaman curry.

 

Like I am a Vietnamese Phô fan , but i do not eat meat and made this concoction of  Vegetarian Vietnamese Phô.

 

Shrimp- Massaman Curry can be easily made using Shrimp. However the cook time is drastically reduced . You could even make it on the stove top.

Ingredients needed to make the Easy 1 pot Massaman Curry Chicken –

 

  • Chicken – Like I always say , I like to use Boneless , Skinless Chicken breasts , diced into cubes. You can always use Chicken thigh . You could even use bone in Chicken , however the Cook time shall increase by 10 minutes .

 

  • Potatoes- I have used Yukon Gold Potatoes , Russet , Red Potatoes.Or a bag of mixed Potatoes. Potato is an integral part of the curry , some even like Sweet potatoes, carrot and a few vegetables in their curry . This adds to flavour and more fibre to the curry dish.

 

  • OnionsOnion  Add an extra depth of sweetness to the Mildly Sweet Massaman Curry . I like to use a Sweet onion Diced. Nonetheless any onion from your pantry just works well. A Shallot diced into cubes works fine too.

 

  • Oil– any neutral oil can be used to make the recipe. Oil like canola , Rice bran work well. 

 

  • Peanuts-  I have used regular unsalted to make my own Homemade Peanut butter, dry roasted Peanuts to garnish the dish . We love the extra crunch in the Sweet and spicy Easy 1 pot Massaman Curry Chicken. I know a lot of my friends who like to add Cashews . You can definitely use what pleases you. Incase of Nut allergies please avoid peanuts and Peanut butter . Incase you are allergic to peanuts , you could use Cashew Butter / Almond butter too!

 

  • Ginger Garlic paste  or minced- I like the Taste of freshly minced Ginger and garlic. However like i said , pantry staples and the rush of a weeknight , you most probably will end up using ingredients out of a can. Do not stress , use organic Mantra Ginger and garlic mince , it is authentic 

 

  • Massaman Curry paste – There are tons of options available in the Asian markets as well as Online stores. The Maesri brand is what works really well for me. It has the authentic Flavours of Thailand. The Curry paste is made with spices like , Chilly, cumin, cloves, cinnamon, lemon grass , coriander etc. Its great to make the Easy 1 pot Massaman Curry Chicken .

 

  • Peanut butter – I make my own nut butters. They are devoid of any preservatives and artificial flavourings. Better Butter. I call it the better butter. Believe me when i say its not at all difficult.

 

  • Tamari /Soy Sauce/- Tamari is  gluten free Soy sauce, Incase of gluten allergies or Celiac please use Tamari . Light Soy Sauce is used incase you do not have allergies and have a bottle Stacked up in the pantry. The Asian dishes always use a hint of Soy Sauce to add colour and depth of flavour.Even Oyster Sauce can be used . The traditional recipes also mention Fish sauce . I am however not a Fish Sauce fan , so I avoid Fish Sauce.You could use any of the above mentioned sauces. 

 

 

 

  • Coconut Milk- A can of Coconut Milk , just adds the creaminess to the Massaman Curry.I prefer to add the Coconut milk right at the end or just before serving . Coconut milk has a tendency to split and curdle . So i prefer adding it just minutes before serving.

Instructions On how to make the 1 pot Massaman Curry Chicken 

 

I have been making Thai Massaman Curry on the stove top. I am so thrilled to convert the Recipe to the Instant pot version. Using all the same authentic flavours and spices , just pressure cooking it for an easy IP version.

 

 

Step by step

 

  • Switch on the Instant Pot on Sauté mode once the pot gets hot (shows on the Indicator) add Oil to the inner pot .

  • Next ,  to the hot oil add Ginger and garlic mince .

  • Add in the Onions , The cubed Potatoes and Sauté for about  30 seconds.

  • Now add the cubes of chicken . Sauté and add the wet ingredients.

  • The Peanut butter goes in next. Make your own Peanut butter too . The peanut butter gives it a nutty flavour. You could totally avoid just incase you have allergies.

  • Add the Maesri Brand Massaman Curry paste  . At this point your kitchen is smelling heavenly and the 1 Pot Massaman Curry Chicken will come together in no time now .

  • Next add the Tamari/ Soy sauce/ oyster sauce/fish sauce. Either work well. Now its time to add the Tamarind paste. The tangy taste comes from the tamarind It is easily available too. Now to make it Sweet add the Coconut palm Sugar. Add in the most important ingredient – Salt . Now switch off the Sauté mode .Its time to pressure cook.

  • Next add a Cup of water . Close the lid of the Instant Pot  

  • Place the Valve on sealing and pressure cook on high pressure for 5 minutes and 10 minutes of natural pressure release. Once the pressure is released completely and the float valve drops, open the lid and add the Coconut milk . Serve hot with Coconut Rice 

  • Steamed Jasmine rice also is a great accompaniment to this Amazing 1 Pot Massaman Curry Chicken.

 

 

PRO TIPS – To make the 1 pot Massaman Curry Chicken at home with ease.

A couple things to remember are

 

  • The coconut milk splits as you simmer it too long . So just add before serving.

  • If you are allergic to peanuts or nuts in general – do check the labels of the sauces.

  • Also Do not add the nuts for garnish too.

  • This Curry freezes very well so make a batch and freeze in

  • Ziploc bags / ziploc containers The 1 pot Massaman Curry Chicken is ready to thaw and eat.

Ingredients

  • Chicken - 1 pound -cut into cubes
  • Onion- Cubes - 1/2 cup
  • Potato cubes- 1/2 cup
  • Ginger garlic mince - 1 tsp
  • Peanut butter- (optional)- 2 tbsp
  • Maesri brand Massaman Curry paste- 3 tbsp
  • Soy sauce/tamari/oyster sauce - 2 tsp
  • Tamarind paste- 2 tsp
  • Coconut palm sugar- 2 tbsp
  • salt- 1/2 tsp
  • water- 1 cup
  • Coconut milk- 1 can
  • Garnish- Lime wedge, Cilantro, Peanuts or cashews

Instructions
