Asian marinade !
This is one of the few recipes passed on to me by my mother. being a world traveller, my mom’s food had influences from around the world. while in Singapore she made a lot of friends.
One of her close friends made this amazing marinade.
This is her recipe. As children we loved to eat chicken skewers and fried rice.I lost my mom in 2018 I dedicate this recipe in her fond memory.’Love you Ma”.
Why do i love to make marinades for my meats?
An Easy Asian Marinade is a Mix of Oil, Herbs, a few spices, Sauces. The Marinade adds a layer of flavour to the food items . Like Tofu, chicken , meat .
The other thing that i have noticed is that Marinated meats cook faster as they are more tender. The food can be marinated from a couple hours to days to get the desired result.
Ingredients needed to make the Asian Marinade
-
Light soy/– I prefer light soy as it is saltier than dark soy. Dark soy is mostly used for imparting colour than flavour. Tamari for Gluten free version.
-
Oyster sauce– It’s a Chinese family style cooking staple – its used to give savoury flavour to meats and vegetables.
-
Sesame oil- I like the nutty flavour imparted by the sesame oil. The rich toasted flavour just makes any vegetable, tofu or chicken taste wonderful.
-
Chinese rice wine vinegar– This has low acidity compared to its western counter parts and is also a tenderiser. Alternatively you could use any vinegar just make sure the quantity is lesser than the one mentioned in the recipe card.
-
Ginger garlic- I like the flavour burst that Ginger and garlic bring to the Asian marinade. Adding zing to the meal without making it super spicy. You can just mince some fresh ginger root along with a few cloves of garlic.
-
Chinese Five spice seasoning– generally used for meats to make them more flavourful. I use it most of my Chinese cooking. This warm , spicy sweet seasoning can be used for sweet and savoury dishes. It is a blend of star anise, cinnamon, ginger , cloves etc.
-
Pepper powder– White or Black pepper powder works absolutely well. Just to add a layer of heat.
-
( Just whisk it all together and drench the tofu or meat of your choice in this flavourful concoction)
