Delicious Holiday Traditions .Holidays are special, and so are some traditions. This recipe of Green Bean Casserole  is very close to my heart. Made with fresh ingredients (ditch the Can of mushroom soup).

The Components of the Green Bean Casserole .

 

This recipe is a completely vegan take on the traditional Green bean casserole.

  • Ditched the Can of Mushroom Soup for fresh mushrooms. I prefer to use fresh ingredients instead of canned and preserved. believe me when i say use fresh you do not need to break a bank. 
  • Swap the cream with Coconut Cream. Its so much more tastier . Your Vegan friends will bless you for this recipe.
  • Use Almond crumbs, meal or Flour. Almond will act as a thickening agent, add crunch and a whole lot of vitamins to this rich and flavourful meal.
  • Fried onion Fan? Then why not fry a batch at home. Instead of store bought version , make your own in the Air fryer. 
  • Use Fresh Green beans. If you are in a hurry , go ahead and use canned version. However, the fresh Beans just need to be blanched for a few minutes . Nothing much!
  • Garlic –Minced garlic adds a lot of flavour to this recipe.
  • Onions – diced onions. The recipe calls for diced onions. Onions add a little sweetness to the recipe. 
  • Olive oil- extra virgin olive oil . Everything tastes delicious with Olive oil. It also provides essential minerals and vitamins.
  • A Dollop of vegan butter (optional).

How to make the Green Bean Casserole?

This Green Bean Casserole is a recipe I invented for my Vegan friends.It has very few components.

  • Start by blanching the green beans. Fresh green beans need about 2 to 3 minutes in boiling hot water. Just boil for about 2 minutes with salt . Immediately strain and place them in a bowl of ice water to stop further cooking.
  • Place the trivet in the inner pot and place the air fryer basket on the trivet.
  • Simply start by layering the blanched Green beans in a heat proof bowl.
  • Next add the chopped mushrooms on the green beans.We are using fresh mushrooms and not the cream of mushroom soup. This makes the recipe more healthier version.
  • Layer the chopped onions. I like to use red onion. However a yellow onion, shallots any kind works well to.
  • Add the minced garlic /mix it with the butter .
  • Add a dollop of vegan butter/margarine. Its just adds a layer of moisture making the dish extra creamy and delicious.
  • To this mix now add blanched almonds slivered or coarsely ground. You can also add almond flour, (which is technically blanched almonds ground).
  • Next add a Cup of coconut cream . This could be a store bought organic can/homemade (too much grinding).
  • Close the Lid of the Air fryer and bake this mix at 180deg c/350 deg F for 20 minutes. 
  • Incase you feel that the bake is still in the  liquid state and not set well  you can add more almond flour and bake for another 5 minutes.
  • Top with fried onions or almond slivers for the crunch.
  • Enjoy the Green bean Casserole a healthier , traditional recipe . Eat guilt free!

  • Make it ahead!
  • You can make this green bean casserole up to a day in advance.
  • Air fry the crispy onions
  • Blanch the green beans.
  • Then, assemble the casserole with the sauce and the green beans, cover, and refrigerate until just before serving.
  • Onions, Mushrooms can be layered in the baking Dish.
  • Add the almond flour in a layer.
  • Next add the coconut cream and leave it in the refrigerator.
  • Store the crispy onions separately at room temperature.
  • When you’re ready to eat, layer on the crispy onions, and proceed with the recipe, baking the casserole until it’s heated through. Enjoy!

  • Green Bean- de-stringed, washed and blanched- 2 cup
  • Onions Chopped- 1/2 cup
  • Mushrooms- Chopped- 1/2 cup
  • Vegan butter-1 tsp (optional)
  • Salt- 1/2 tsp
  • pepper-1/4
  • Almond flour/ blanched slivered-1 cup
  • Coconut Cream- 1 cup
  • Fried onions-1/4 cup
  • Parsley Chopped roughly-2 tbsp
