Asian Marinade    , 

For the chicken marinade:

  • Light soy I prefer light soy as it is saltier than dark soy.Dark soy is mostly used for imparting colour than flavour.

  •  Oyster sauce– It’s a Chinese family style cooking staple – its used to give savoury flavour to meats and vegetables.

  •  Sesame oil- I like the mushy taste imparted by the sesame oil.

  •  Chinese rice wine vinegar– This has low acidity compared to its western counter parts and is also a tenderiser.

  •  Ginger  mince and garlic mince adding Ginger and garlic mince adds zing to the meal.

  •  Chinese Five spice seasoning generally used for meats to make them more flavourful. I use it most of my  Chinese cooking.

  •  Pepper powder White or Black pepper powder works absolutely well. Just to add a layer of heat.

    ( Just whisk it all together and drench the Chicken pieces

    in this flavourful concoction)

Make the marinade and store in the refrigerator for about 2 weeks. I like to meal prep ahead whenever I have the extra time on hand to make meals on weeknight easy and quick.

Why do I marinate the chicken for Easy Chicken Fried Rice –

  •  I prefer to marinate all my meats – this process impacts tons of flavours  to the meat.

  •  It also tenderises the meat , making it easier to cook and digest.

 

 

 

 

Which rice can I use to make Easy Chicken fried rice ?

 

  • Preferably left over,  a day old rice can be used as it just gives you the desired take out fried rice texture.

  • Fresh rice just sometimes becomes a mush.

  • Any type of rice – Ideally jasmine , but if you have any low starch rice and less glutinous. Any medium to low grain rice is perfect.

 

 

How To make the rice in your Instant Pot ?

 

 I make Rice , in my electric pressure cooker all the time.Its the easiest and is made within minutes.

To make rice in the Instant pot , add a cup of washed rice to the Instant Pot . Then add 1 1/4 cup of water to the washed rice. Close the lid of the Instant Pot and pressure cook on rice mode, valve on sealing. Natural pressure release.

Ingredients for the Easy Chicken Fried Rice –

 

  • Marinated Chicken –  My family is a chicken lover. we love everything chicken.So this particular Fried rice recipe i have used hormone free, antibiotic free chicken chunks. However this recipe can be used for any meat you desire.

 

  •  Corn kernels– Frozen or fresh Corn kernels add the desired sweetness to the fried rice . Since I always have  frozen corn in the refrigerator i used the same. its the best way to incorporate a few vegetables in your meat dishes.

 

  • Carrots –Go ahead and add colour to the fried rice. Carrots, peppers what ever is available in your pantry. A good source of vitamin k . 

 

  • Peas – Peas not only add colour and nutrition. Peas are good for the heart, and are loaded with micro nutrients.  In this particular recipe i have used frozen peas.You could use Sugar snap peas, fresh peas.

 

  • Onions-Red , yellow or white any Onion works well with this Fried rice. I have used a red onion diced here.

 

  • Ginger Garlic- Roughly minced Ginger and garlic just adds a ton of flavour to these Asian mains.

 

  • Pepper powder- Crushed black pepper or white or Schizuan  pepper corns work wonders . Add your desired punch.

 

  • Chinese all spice – All spice is a flavourful mix of star anise, cinnamon, fennel, cloves. It is used to flavour  a lot of Chinese delicacies.

 

  • A day old cooked rice- I prefer a day old rice for fried rice. The predominant reason being the grains of rice  just-cooked are soft, sticky and soggy. However A day old rice gives a fantastic texture to the Fried rice . Almost like the Restaurant takeout texture as the grains have dried out enough and are not soggy.

 

  • Neutral Oil- Since we have used a little bit of sesame oil for marination , just use any oil which does not have a strong flavour to make the rice.Canola or Peanut oil works very well.

 

  • Light soyDark soy is very salty and has a very prominent dark colour. i prefer to use a light soy , low on sodium and imparts a beautiful colour.

 

  • Asian chilly pasteIf you prefer to have your meals with a spicy kick , try the Asian chilly paste. Otherwise it is optional.

 

  • Egg- This step is optional too. I have used a scrambled egg right in the end , my daughter likes her fried rice without egg.So please avoid if you are like her.

How To make the Easy Chicken Fried Rice  in the Instant pot?

 

To make this easy Chicken Fried Rice recipe , I prefer to use left over Rice. Rice made fresh is actually too sticky and starchy. This results in a sticky , not restaurant style fried rice.However there are recipes that make Fried Rice using the Instant pot , all ingredients sautΓ©ed and ready to be pressure cooked in the pot. the yield of which isn’t my favourite.

 

So This is how I make this Chicken fried rice recipe.

  • Start by choosing the SautΓ© mode in the Instant pot. SautΓ© the aromatics ie the onions, garlic .

  • Next add the vegetables (frozen vegetables work well)

  • Add the Flavoured marinated chicken and sautΓ© for a minute , covering the Instant pot with a glass lid.

  • Now add the light soy, pepper, Chinese all Spice seasoning, chilly paste (optional).

  • After about 5 minutes of cooking all the above , its time to add a day old or left over rice.

  • Bring it all together by lightly stirring in all the ingredients.

  • I added a scrambled egg in the recipe . You can totally avoid this step . Believe me it tastes incredible even without the egg.

  •  Its time to cancel the sautΓ© mode and serve the Fried rice hot.

Pro Tips:

  • Make the Rice in The instant pot a day prior or whenever in precisely 12 mins. I have a link shared here on how to make the Rice . This  rice can be stored easily in the refrigerator for upto a week.

  • Using a day old or leftover Rice gives the most incredible restaurant style Fried rice. Do not trust recipes that use the instant Pot as the pressure cooker and make a Pilaf instead.

  • Add flavoured or marinated meats. 

  • Season well, But do not add salt , taste before adding extra salt.

  • Egg in this recipe is optional and so is the chilly paste.

A Chinese takeout special. Loaded with flavourful chicken, crunchy vegetables; this Instant Pot Easy chicken fried rice recipe is not just or weeknight meals be a show stopper at a party too. Ready within minutes literally.

Ingredients

  • Chicken Boneless chunks-1cup
  • light Soy sauce-2 tbsp
  • Oyster sauce-1 tbsp
  • Chinese rice wine vinegar-1 tbsp
  • Sesame oil-1 tbsp
  • Chinese All spice -1 tsp
  • Crushed pepper powder-1 tsp
  • Ginger garlic minced-1 tsp

Ingredients for the Fried Rice

  • Marinated Chicken -1cupΒ Β 
  • Β  corn kernells-1/2 cup
  • carrots diced-1/2 cup
  • Peas -1/2 cup
  • Chopped onions-1/2 cup
  • Ginger Garlic-1 tsp
  • Pepper powder-1 tsp
  • Chinese all spice 1/2 tsp
  • A day old cooked rice-2 1/2 cups
  • Neutral Oil-1/4Β  cup
  • Light soy-1/2 tsp
  • asian chilly paste-1/2 tsp(optional)
  • egg-1 scrambled (optional)

Instructions

  1. In a glass bowl, add the Soy Sauce.
  2. Now add the oyster sauce, vinegar, sesame oil, ginger garlic mince, pepper powder, Chinese all spice and whisk it all up.
  3. Next add the chicken chunks and refrigerate at least for 30 mins.
  4. Choose the Sauté mode in The Instant Pot.
  5. Add the Oil
  6. Now add the Ginger Garlic, Onions and the Vegetables.
  7. Saute them for about 1 minute.
  8. Next add the marinated Chicken.
  9. Cook for about 5 minutes , Cover the IP with a glass lid.
  10. Add The Soy sauce and Chilly Paste(optional)
  11. Now Add the cooked rice.
  12. Mix lightly.
  13. Add a scrambled egg(optional)
  14. Serve immediately

Notes
