Instant Mac and Cheese –
A creamy combination of Pasta , Cheese , butter and seasoning . A lot of tasty extras . Béchamel sauce , bacon bits, Vegan cream cheese . There can be versions of this tasty Comfort food . Mum’s across the globe make the Mac and cheese to please a crowd or their teenagers or Toddlers alike.
I have been a passionate cook since a long time now, but I need to mention that Mac and Cheese is a recipe that my family really loves.
So one of the first recipes that I tried in my Mealthy was Instant Pot Mac and Cheese. I have actually made It with Gourmet cheese- Like Chef Gordon Ramsay. Cauliflower and Macaroni Cheese baked along with English Mustard.

Ingredients Needed For Instant mac and Cheese –
This recipe is simple yet delicious , there can be a number of variations that you can make . For example a Spinach Mac and Cheese,Mac and Cheese with Sage butter, Vegan with Basil Pesto .

Macaroni – Elbow Macaroni ,Gluten free macaroni ,Gluten free ShellsAny kind of pasta works well with this particular recipe. I have used Gluten free Elbow Macaroni

Vegetable Stock – You can use water, stock (chicken , vegetable) Homemade stocks are a great too. I have also added milk in this recipe. You can substitute milk with half and half , Plant based Milk too works wonders.

Butter- The choice is again between vegan butter or the regular butter. Butter adds great flavour to the recipe.

All purpose Seasoning– By now you guys must have guessed that I am a All purpose Seasoning ‘Fan’ . It imparts a great taste and also tends to give a hint of spice to the recipe. In this particular recipe I have also added the Italian herb blend. Seasoning is the key to make even the simplest of the recipes fancy and fabulous. The Italian herb mix gives the needed aromatics and balances the cheesiness in the Instant Mac and Cheese.

Sweet Paprika – This is totally an optional spice. It gives a hint of colour and sweetness to the recipe. Sometimes my hubby prefers a dash of tabasco to spice up the dish . Again totally optional.

Instructions on how to make this Instant Mac and Cheese In the Instant pot ?
The most important thing is to make sure that the pasta is not overcooked . Also you do not want lot of cooking liquid so that the sauce is runny and you have a soup . I have written down a few pointers that can help you get the perfect results.

Prepare the pasta- Rather lets say cook the pasta. So first things first , add your Pasta,Butter(not added Traditionally but I like to ) Stock, Seasoning. Stir and close the lid of your Instant pot. Pressure Cook for 3 minutes .

Quick release the Pressure . That is manually release the pressure . This is to make sure that the pasta is still just a little undercooked. Al dente . Just enough bite so you do not have soggy Instant Mac and Cheese.

Stir in the Cheese- To the hot Pasta add Cheese and Milk or cream . I use Whole milk. Add any other seasoning you wish to . Like Hot sauce, Sage leaves, Truffle oil.

Serve hot – Enjoy the Instant Mac and Cheese made Instantly in the Instant pot with fresh ingredients real cheese no fillers and no artificial food colouring. Believe me – you shall never Open a boxed Mac and Cheese again!!

To make the Instant Mac and Cheese –

All pasta have a different cooking time. While cooking the pasta in the Ip make sure that the cook time will be cut in almost half .

The pressure has to be released manually released . Pressure will overcook the pasta further more.

Milk or cream or half and half can be used. Depending on how creamy you like your pasta. I like whole milk and not cream. You can use cream and make a creamier Mac and cheese.

Cheese – Cheese of your choice , as i mentioned earlier in the blog . However a few of my favourites are-

Ingredients
- Pasta- 1 pound
- Vegetable Stock- 3 cups
- Water- 1 cup
- Butter- 1 tbsp
- All purpose seasoning- 2 tsp
- Ground Mustard- 1tsp
- Sweet paprika- 1 tsp
- Salt- 1 tsp
- Cheese blend of your Choice- 2 cups
- Whole milk-1/2 cup
Instructions
- Switch on the Instant Pot on Pressure cook mode.
- Add The pasta into the Inner pot.
- Next add the Vegetable Stock and Water
- Now butter to the pasta and stock
- Next season well with All purpose seasoning.
- Add the Ground Mustard and Sweet Paprika
- Stir in all the ingredients well.
- Close the lid of the Instant pot
- Pressure cook on high for 4 minutes
- Quick manual pressure release.
- Open the Lid , its now that you add the Grated Cheese ( you can add your favourite Blend)
- Add Whole milk about 1/2 a cup.
- Stir in all the Cheese , milk and pasta.
- Let stand for about 30 seconds.
- The Instant Mac and Cheese is ready to be served.
