Homemade Chicken noodle soup is absolutely delicious. Made with fresh veggies, and a flavourful broth. This Instant pot Chicken noodle soup is perfect for a weeknight / weekend comfort food.Low calorie, filling and made with  organic noodles this just makes the Crummy weather pass away. Alternatively you could use Zucchini noodles for a healthier low carb version. A perfect recipe of Instant pot Chicken noodle soup for cold nippy weather , which can be easily made in a pressure cooker.

Broth.

The key ingredients for a good soup is a flavourful broth.Homemade broths are tasty, low in sodium and have no preservatives.So when you want to cure a sniffle, I like to use homemade broths. Store bought broth is good when you are busy. Crushed Bouillon works well too for a quick soup. There are times you do not want to walk the extra mile. I think its absolutely ok!

  • To make this broth I simply boil the chicken (whole, bones, or even chicken thighs) with

  • 2 carrots, 2 stalks of celery, 3 onions chopped roughly.

  • 1 bay leaf, tsp of  thyme tsp ,rosemary, couple peppercorns.

  • Add about 4 quarts of water.

  • Simmer for 3- 4 hrs.

  • Strain and refrigerate overnight 

  • Use to make your favourite soups.

 

 

What else goes into this Instant pot Chicken noodle soup?

 

The homemade  Chicken Noodle soup can be made in a variety of ways. You will find tons of recipes in the market and online using all kinds of sauces, vegetables, spices, cream you name it.

 

This one is my Mom’s recipe. Simple yet flavourful. Minimalistic use of vegetables, and herbs. Just a good broth and incredible flavours.

 

  • Vegetables: I have used carrots, onion, celery in this recipe. You could however add zucchini, beans, cabbage. Potatoes, sweet potatoes, spinach . Make it your own.

  • Noodles: I personally prefer to use Organic noodles . A lot of my family and friends prefer pasta, spaghetti, rice noodles or any pasta of your choice.Make a healthier version using zucchini noodles . If you are on a Keto , Gluten free diet.

  • Herbs and spices :  If you have a flavourful broth all you need is a little salt and pepper. Again you could add rosemary, thyme, bay leaf. I like a plain, comforting bowl , just like Mom used to make.I made this one for my husband he prefers to have a little heat in the soup, so I added chilly flakes and All purpose seasoning to this one.

  • Chicken : My mom used to make this with chicken pieces sautéd in along with onion, celery, carrots. The sautéing adds extra depth of the flavours. One may use leftover rotisserie chicken, whole chicken, chicken legs bone in. I made this one with chicken pieces , so you get smaller bite size pieces in every spoon.

Can this Instant pot Chicken noodle soup be made on the stove top?

 

Absolutely ! This recipe is suitable for a stove top cooking option as well. The cook time varies slightly.

Since you use a  previously made chicken broth, it takes less time to cook and get a sinfully tasty soup.The pressure cooker or the Instant pot helps hasten the cooking process and uses less energy and time.

 

 

 

Instructions on  how to make the Instant Pot  Chicken noodle soup in Instant pot.

  • Use the sauté mode in the Instant pot. Add oil, just enough to sauté the onions.Just want to soften them as the rest of the cooking will eventually happen in the pressure cook setting

  • Next add the celery, carrots too.In a similar manner sauté for a bit. I sometimes prefer to just dump the vegetables in the IP and sauté all together.

  • Dump in the bowl full of chicken , give it a quick stir to separate the pieces , and even cooking. Again the chicken sautéing along with the carrots, onion and celery makes the soup more yummy.

  • Next cancel the sauté mode. Add the spice, All purpose seasoning and heat form the chilly flakes.

  • Add the Chicken broth to the glistening vegetables.

  • When you add the noodles make sure you drop them in a layer , you do not want sticky, clumped up noodles in your soup.

  • Give a quick stir.

  • Close the lid of Instant pot , seal in the pressure and cook for 5 minutes on high pressure.

  • After natural pressure release, which takes another 5 , open the lid of IP add salt to taste if needed.

  • Serve hot with a crusty bread or bread sticks Or just enjoy it on its own.

Pro tips to make this Instant Pot  Chicken Noodle soup.

 

  • Incase you would like to use frozen chicken, I would suggest increasing the pressure cooking to 10 minute  with natural release.

  • Some prefer to use a whole chicken and then shred the meat once the soup is done. 

  •  Use chicken thighs in this recipe if you like dark meat.

  • You can make a low carb version by using zucchini noodles. i recommend to try and cook for a lesser time as the zucchini cooks super fast.

  • Any pasta works fine. Use your pantry staples instead of running to a store, when someone is feeling a little under the weather you want to sit by them and comfort them. So use any pasta noodle available. Don’t break a bank making this easy recipe.

  • The stock can be frozen into  ice cubes ,  mason jars , Ziploc quart bags ,  lay them flat till they freeze and then stack them vertically.

  • The Store bought stocks contain a lot of sodium, if using the store bought variety, please do not add salt . Do taste and add if needed. You do not want a salty soup.

  • Chilly flakes and seasoning are absolutely optional.

  • I Used organic Ramen egg noodle. Please feel free to use any noodle of your choice. Pasta of any variety works well too.

Ingredients

  • oil-1 tsp
  • chopped onions- 1/2 cup
  • chopped celery stalks-1/2 cup
  • carrots chopped-1 cup
  • chicken cut into cubes-1 1/2 cup
  • chicken stock- 60 ounces (2 ltrs)
  •  Gf Ramen noodles or Rice noodles -1/2 cup
  • All purpose seasoning-1 tsp
  • chilly flakes-1/4 tsp
  • salt-1/2 tsp

Instructions

  1. Start the IP in sauté mode.
  2. Add oil t the inner pot.
  3. Next add Chopped onions and celery.
  4. Add the carrots.
  5. Now add the Chicken pieces.
  6. Sauté for about a minute.
  7. Next add the all purpose seasoning and chilly flakes ( optional)
  8. Now add the Chicken stock to the inner pot.
  9. Cancel Sauté mode.
  10. At this point add the noodles to the stock in a single layer.(refer to the video)
  11. Add salt if needed.
  12. Close the lid of IP and seal in the pressure.
  13. Pressure cook on high for 5 minutes.
  14. Release the pressure .
  15. Garnish with a lime wedge, parsley .
  16. Serve hot.
