My Mom was an excellent cook, She made world cuisine when we were young  , as my dad was a world traveller. tWe Had Asian , Italian delicacies and even a few Cuban meals on our Dinner table.
This Instant pot Rava Dhokla is a staple in our Gujarati home. She used to whip up a batch in no time. Soft , fluffy and delicious . Enjoy it as a tea time snack, as a lunch side ,or even Entertain. Mom – You shall always be missed . Love you forever!

What is Rava Dhokla /Semolina Dhokla ?

 

If you are following my blog then you would know this is the second recipe in my Semolina series.

Semolina is coarsely ground durum wheat. A thick batter is made using yogurt, oil , Spices and salt. Ideally Dhokla is made with Rice and lentil  batter(similar to the Idli batter) left to ferment overnight.

This recipe is an Instant recipe made with Semolina using a fruit salt. The fruit salt gives fermentation.

Dhokla is a quintessential Gujarati Snack known across India . The Dish travelled with the Gujarati community and has become popular with the vegetarian /vegan across the globe . Vegans can substitute yogurt with nut yogurts or even lime /lemon juice. The reason i swear by this recipe is because it does not require- 

  • Easy and made instantly – No overnight fermentation needed.

  • A great snack to entertain with, tastes good even at room temperature .

  • Children love it too!!

  • Healthy and Delicious and a low calorie Snack.

I shall list the ingredients here to give you a gist on what are the key ingredients in making this recipe and why it is a popular Indian snack. 

 

  • Rava – Sooji/Semolina is coarsely ground durum wheat. Dhokla can however be made with the gluten free substitutes too. When made using Rice Flour and lentil mix. Also many households make this with Buckwheat flour, Polenta etc.

 

  • Yogurt – it is used to add a hint of tangy flavour to the Dhokla. However , if you are a Vegan or going Dairy free Lemon juice can very well be used instead.

 

  • Fruit salt – This is an effervescent Compound made with organic acids such as Citric acid/tartaric acid and salts such as Sodium Bi carbonate , sodium carbonate etc . (Thank god for my education in Science!! ) This compound has changed the way Dhokla is made . Fruit salts were originally sold as a remedy for indigestion.  They make the batter light and fluffy instantly. Basically it acts as the leavening agent.

 

  • Seasoning /Flavouring – Its a simple recipe with no fancy seasoning. I have used Green chilli and ginger along with salt. Many just used Salt and pepper. We garnished it later with cilantro leaves and a tempering of mustard seeds and curry leaves. 

 

  • Oil – Oil is used in the recipe go get softness to the Dhokla. It is used sparingly . Any oil can be used for the same. We have used a neutral oil – Canola /sunflower can be used.

 

  • Water – Water is used to make the batter . To get the pouring consistency , water is needed.

Step By step Of Rava Dhokla

 

Instructions on how to make the Rava Dhokla In Instant Pot.

 

  • Mix all the Ingredients for the Dhokla Batter ( add the Fruit Salt later) together in a medium size bowl. Add water to make a batter with pouring consistency .

 

  • Before making the batter, It would be handy to grease a baking tin , 8″ round cake tin works just fine.

 

  • You could  use oil , butter or ghee to grease.If necessary add a tablespoon of water if the batter looks dry.

 

  • Mix well and then add the fruit salt.  When the fruit salt is added the batter immediately  foams up. Do not over mix the batter as you would end up in dry Dhokla.

 

  • Pour into a greased tin and steam the Dhokla in Steamer/IP Inner pot using steam function.

Pro Tips –

  • Make it Gluten free – Use Fox tail millet instead of Semolina.
  • Do not over mix the batter as you would end up in dry Dhokla.
  • Incorporate all the fruit salt into the batter.
  • The consistency of the batter is light and has to be pouring , yet not runny and watery.
  • If the cake tin is greased well, Invert the Tin onto a serving platter, or else using a knife run through the edges (circumference) to release the steam dhokla off the tin.

Instant Pot Rava Dhokla/Semolina Dhokla

Prep Time 5 minutes
Cook Time 12 minutes
Additional Time 5 minutes
Total Time 22 minutes

Ingredients

  • Semolina- (lightly roasted) - 1 cup
  • Yogurt (incase vegan use lemon juice 2 tsp ) - 1/2 cup
  • Water- 1 cup
  • Green chillies finely chopped - 1tsp
  • ginger finely chopped - 1/4 tsp
  • salt- 1 tsp
  • oil- 2 tbs
  • Fruit salt- 2 tsp

Instructions

    1. Mix all the Ingredients for the Dhokla Batter ( add the Fruit Salt later) together in a medium size bowl.
    2. Add water to make a batter with pouring consistency .
    3. Before making the batter, It would be handy to grease a baking tin , 8" round cake tin works just fine.
    4. You could  use oil , butter or ghee to grease.If necessary add a tablespoon of water if the batter looks dry.
    5. Mix well and then add the fruit salt. 
    6. When the fruit salt is added the batter immediately  foams up.
    7. Transfer the batter to the Greased cake tin.
    8. Switch on the Instant pot .
    9. Add 1 1/2 cup of water to the Inner pot.
    10. Place a trivet inside the pot. Next place the batter filled Cake tin on to the Trivet in the inner pot.
    11. Close the lid of The Instant pot and set the pressure valve to venting position.
    12. Select Steam function for 12 to 15 minutes.
    13. Once the timer goes off, cancel the steam function and remove the tin from the Instant pot.
    14. Let cool for 5 minutes.
    15. Test the Dhokla by inserting a toothpick in the centre. It should come clean.
    16. Temper the dhokla using Oil and mustard seed tempering (optional).
    17. Garnish with Cilantro and serve with your favourite Chutney.

Notes

Do not over mix the batter as you would end up in dry Dhokla.

Incorporate all the fruit salt into the batter.

The consistency of the batter is light and has to be pouring , yet not runny and watery.

If the cake tin is greased well, Invert the Tin onto a serving platter, or else using a knife run through the edges (circumference) to release the steam dhokla off the tin.
