These Air fryer Seekh kababs can be easily made on the Grill /Stove top.

Instead of placing the kababs in the Air fryer basket , place them on a skillet/Grill.

Since the Grill or the Stove top heat is higher, the kababs will be done in 3-4 minutes.

Chicken Mince: This recipe uses Chicken mince. I prefer antibiotic free, free range chicken mince . It also needs a little bit of fat incorporated to make juicy kababs .A good mince has to have the adequate amount of fat , not too much and not too less.

Egg: Just need 1 egg. Free range , antibiotic free is what I have used . Its used as a binding agent.

Ginger garlic paste: You could use store bought or homemade. I just grind a small piece of ginger and a few garlic pods in a grinder to make a paste, or just chop them fine.

Onion: I like to use chopped Onions in this recipe. Many recipes of kababs use grated onion , I feel it just adds a lot of water to the chicken, making it a ‘goey’ mess.

Spice Mix: Kashmiri red chilly powder, garam masala, coriander powder, turmeric, salt. If you prefer to eat absolutely no spice you can avoid the red chilli and garam masala. These can easily be replaced by smoked or sweet paprika or ground all spice powder too.

Gf Starch ( used a GF tapioca starch here): I personally like to use Gf tapioca starch instead of any other binding agent like bread crumbs , because the helps bind without imparting any flavour and makes the kababs smooth and soft .You can also avoid this step .

Potato starch can be used of even oats or almond flour.

I prefer to chop the red onion extremely fine , some recipes use grated onion. I feel that onion releases a lot of water when grated. This in turn would make the chicken mince more watery and a ‘Goey’ mess.

Add less binding agents. The corn starch used in this recipe gently binds the meat . Eggs too when added in a large quantity would change the texture and taste of the kabab.

Do not over cook the kababs. When overcook, the mince looses a lot of fat and water. The kabab will tend to be chewy .

Cover the kababs loosely . I prefer to cover the ready kababs with foil or serve them immediately. Covering the kababs maintains the right air circulation without sweating the meat .This also helps to seal in all the wonderful juices.

You can make the kababs ahead and freeze them , reheat and enjoy them too. Only do not over cook them so they still retain the juices ,while you reheat.

Bamboo skewers are used in this recipe. Soak them in a tray filled with water. This will prevent them from burning while the meat shall cook.

While rolling the Kababs , grease the palms of your hands with a little bit of oil. This shall help you roll the kababs without a mess. Its not rocket science, you will get the hang of it after one.

This recipe can be made with the meat of your choice and also control the level of heat depending on your taste ,without altering the texture and the authenticity.

Ingredients
- Chicken mince  -1 cup
- Red Onion finely chopped -1 cupÂ
- Egg -1 large Â
-   Ginger Garlic paste - 2 tsp Â
- Â Kashmiri red chilly powder -1Â tsp
-  garam masala powder – ½ tsp
- Coriander powder- 1tsp
- turmeric powder- ½ tsp
- GF starch -1tsp
- salt -1tsp
- Cilantro chopped- 1 tbsp
- Oil to lightly brush the kababs- 2 tsp
Instructions
- Place the chicken mince in a large bowl.Add the chopped Onions, Ginger garlic paste
- Next add the dry spices, red chilly powder, turmeric powder, garam masala, coriander powder and salt.
- Now mix the corn starch lightly
- Lightly whisk a large egg in a and add to the mix.
- Add the chopped cilantro.
- Mix all this lightly so as to make a smooth mix.
- Leave the mixture in the refrigerator to rest at least for ½ hour.
- Roll the kababs ,by applying a little oil to the palms .
- Place the skewers in the centre lightly roll again and set aside
- Place the rolled kababs into the Air fryer baskets lined with parchment paper.
- Brush with oil .
- Cook the kababs at 180 deg C /350 deg F for 5 mins
- I prefer to keep an eye and flip them over to evenly cook them and get a beautiful golden colour.
- Serve with mint yogurt, onions .
Notes
Pro tip:
- Chop the onions fine, do not grate .
- Brush the kababs with oil.
- You can make these kababs in skillet too. Just Follow steps 1-9
- Brush lightly with oil.
- Place in a non stick skillet and cook for 5 minutes.
- flip intermittently .
