Succulent pieces of Chicken threaded onto skewers with a medley of colourful vegetables.  One can make it with a variety of fruits , vegetables, meat, fish. These Air Fried Chicken Tikka kebabs are mildl spiced with pantry spices, made within minutes using minimum ingredients.

I like to keep things simple so every meal can be a visual and culinary  treat and even the most dull weekday can be made into a culinary affair.

What are Chicken tikka kebabs ?

Kebab or kabobs as they are called are small chunks of meat , or fish threaded onto a skewer and cooked on an open fire or a grill. This Chicken Tikka Kebab , however is my version of a quick fix. I am a big fan of Air frying . My recent discovery is the Mealthy Crisp lid, So i decided to make these Chicken Tikka Kebabs in my new apparatus.

There are a lot of versions of the kebab. The kebabs can be made over a stove top grill pan too. I have been making a variety of kebabs while entertaining , whereby i used a skillet grill pan , and served the kebab as a platter.

What are the ingredients used in this Easy Chicken Tikka Kebabs?

These kebabs are like I said my version of the Tikka kebabs from the Indian restaurants. The Tikka kebabs are fiery red , with a lot of tandoori masala.These however have minimal spice, for all my friends who prefer to get the aromatics but minus the heat.

  • Yogurt: The base of any succulent meat is cream , or yogurt. I have marinated the Chicken chunks in a yogurt sauce. the cream imparts a layer to balance the heat and also tenderises the meat. The kebabs when grilled over an open fire too do not tend to become dry and chewy.
  • Garlic: The garlic is one of the staple ingredients of Indian cooking. Besides its tremendous health benefits , fresh garlic acts as a flavouring agent and also as has anti viral properties. I personally love the aroma and its strong flavour.
  • Ginger: Again one of the staple ingredients of Indian food. Its a super food the world is raving about.Apart from the zing and heat that it imparts as an aromatic, ginger is also anti microbial, anti viral in nature. 
  • Cumin: I have used Cumin to add a nutty, smoky flavour to the kebab. Since i made these Kebabs devoid of any heat apart from the heat imparted by the aromatics. Cumin added a smoky flavour to the Chicken tikka kebabs. A lot of recipes use a tikka masala . I have kept it minimalistic.
  • Crushed pepper:One of the pantry staples. Crushed black or white pepper is absolutely fine in this particular recipe. 

What Vegetables did i use in this Easy Chicken tikka kebabs?

I love a colourful skewer of  kebab. Making skewers with any meat its a healthy practise to eat vegetables along. Children and adults alike love the smoky nutty aroma of the meat and the crunch of the vegetables.

Go Crazy while picking colours. Red , yellow, orange , green peppers.

Zucchini, yellow squash, Red onion, yellow onion, mushrooms. You can use whatever is lying in your refrigerator too.

How Does one thread the meat and vegetables on to the skewers?

The skewers used in this particular recipe are the bamboo knot skewers. These are easily available on any  site like Amazon.com. There are a few other varieties available too. Coming in various sizes . I soak them in water for at least an hour , you do not want them to burn before the kebab cook.

  • Cut the vegetables approximately the same size.
  • Even the chicken or meat to be cooked needs to have the same size pieces or chunks. To assure even cooking.
  • Simply use the pointy end and start to assemble the kebabs, alternating with vegetables and meat.
  • Since the knot skewers are extremely small , i used a single chunk  of chicken between a lot of vegetables.
  • This also ensures Bite size skewers ready to be served as a quick snack or appetiser.Step by step of Chicken tikka kebab
Instructions to make the Easy Chicken tikka Kebabs In  Crisp Lid and Stove top Grill pan.
  • Instructions for the Mealthy Crisp lid or Air fryer:
  • Start by placing a Trivet in the Inner pot (Multi pot Inner steel pot) For the ones using another brand of Air fryer like my Philips Just line Af basket with parchment
  • Then We place the Air fryer basket. the basket with either perforated Parchment paper or parchment paper (you can make a couple of holes ) the holes allow even air circulation.
  • Next you place 3 to 4 skewers of your Chicken Tikka Kebabs . Make sure there is enough room in the basket . 
  • Brush the skewers with a neutral oil. This prevents the Kebabs from drying out.
  • Close the Lid and cook for 5 minutes at 350 deg f or 180 deg c . 
  • I prefer to first cook for 5 minutes and check on the skewers . Add a minute just in case you have bigger pieces of chicken.
  • Since you do not want chewy , over cooked meat, and soggy vegetables.
  • Serve hot with your favourite dipping sauce.

Various Sauces that can be served with Easy Chicken Tikka Kebabs.

I love to serve an array of dipping sauces for my Kebabs. Its good to serve authentic Mint or cilantro Chutney. However, food is all about love and Individual Palate. Serve with

  • Mint mayo
  • Greek yogurt with garlic and oregano.
  • Sweet Chilly sauce.
  • Sweet tamarind Chutney. 

These all work pretty well with these Easy Chicken Tikka Kebabs.

Pro tips:
  • The most important thing to remember is to have all the pieces on your Skewers approximately of the same size.
  • Brush with oil to prevent dry chewy kebabs.
  • Marinate the chicken longer if you can. Overnight is preferable.
  • The recipe is freezer friendly. The marinated Chicken can be frozen in Ziplock bags  for upto 2 weeks.
  • Use a variety of colourful vegetables.

Ingredients

  • Chicken - Boneless chunks Cut into 1.5 inch pieces --1 lbs
  • Green pepper- cubes 1.5 inch - 1/2 cup
  • Red pepper- Cubes 1.5 inch--1/2 cup
  • Yellow pepper -1/2 cup
  • Squash -roundels- 1/2 cup
  • zucchini roundels- 1/2 cup
  • Onions Red Cut in Cubes -1/2 cup
  • The spice mix for Chicken
  • Oil- 2 tsp and extra for brushing
  • Yogurt- 1/2 cup
  • Cumin powder-1 tsp
  • Crushed pepper-1 tsp
  • Salt-1 tsp
  • Garam masala- (optional )1 tsp
  • Sweet Paprika- 1 tsp
  • Ginger and garlic paste- 1 tsp each
  • Skewer sticks 

Instructions

For the Marination of Chicken Chunks:

  1. In a large bowl, add the yogurt , 1 tsp oil, ginger garlic paste, salt, cumin , garam masala, pepper powder, sweet paprika.Mix it all together using a whisk.
  2. Cut the chicken into 1.5 inch pieces .
  3. Add to the bowl containing the yogurt spice mix.
  4. Cover and refrigerate for at least 15 minutes

For cooking the Kebabs in Air fryer

For the Stove top grill pan.

  1. start by placing the skewers in the grill pan .
  2. Brush lightly with oil.
  3. flip occasionally ( heat in a grill pan is from below)
  4. Cook for approximately 5 to 7m minutes.

Notes

Always start by 5 minute Air frying time. Check on the skewers . Check for colour, and even cooking .For chicken see that the juices are clear.

Brush the skewers with oil .It prevents drying.

Cut the vegetables in equal sized pieces.
