Chicken Piccata recipe will take you to the cobbled streets of ‘ Italy ‘. Buttery, lemony and briny caper sauce over perfectly cooked Chicken breasts. A light and healthy Weeknight meal . This is my take on the Italian classic A  Gluten free ,low-Carb, Keto version.

A Classic Italian Chicken recipe, dredged in flour and served with Tangy lemony Caper sauce. It was one of my family favourites on our Trip to Italy.

 

This recipe is a twist on the classic . Low carb, Gluten free and Keto , I make this quite often for a quick and healthy meal. Its a no brainer in under 30 minutes.

 

My teenager loves Capers , and when you have a buttery lemony sauce, its a combination to die for. Pair it with Steamed Asparagus, Or wilted Garlicky Spinach !! Winner it is.

 

 

 

What is Chicken Piccata? 

 

A classic Italian Dish,” Piccata” refers to meat ( Chicken or Veal) Usually floured and sautéd until brown. A buttery  sauce with Lemon, Capers and lots of Garlic. This is Chicken Piccata. 

 

I have however made this recipe without flour. I like the simplicity of Chicken when it is Sautéed in olive oil and garlic . This is an Easy, Delectable Dish, for a weeknight quick dinner for the Entire family. When made in the Electric pressure cooker its even faster and more convenient.

What are Capers?

 

Capers are immature flower buds of the Flinders rose or the Caper Bush . They are dried , brined or Pickled.

 

Capers have a floral, tangy, and salty flavour to dishes. Capers are the buds of flowers that originated in the Mediterranean . They are used to garnish a lot of Dishes. Even fried and used on Carpaccio, Fish dishes , Eggplants etc.

Step by Step Chicken Piccata

 

Ingredients needed to make this Easy Chicken Piccata.

 

Here is a list of Ingredients , however  detailed measurements and Instructions can be found in the Recipe card below. 

This Flavour packed  Easy Chicken Piccata recipe is my take on the traditional flour dredged Easy Chicken Piccata. I avoid the flour as we have few members of  my family who have  Gluten intolerance.

 

You Could alternatively use Potato Starch / Corn Starch /tapioca starch. I however wanted to make a low carb version. You could also check out a few of my other  Gluten Free recipes Instant Pot Hawaiian Chicken

 

You can just get the Ingredients for the Chicken Piccata recipe and make this in your home .Celebrate the joy of cooking.

 

  • Chicken breasts- The chicken used in this recipe is antibiotic free, hormone free chicken breasts. You could use veal to . Traditionally this recipe is made with Chicken or Veal.

 

  • Capers- The Capers are the star ingredient in the recipe. I add the capers as a garnish to the finished Chicken breasts drizzled with a luscious lemon butter sauce. I prefer them to be fresh and bursting in the mouth.

 

  • Lemon Juice – Juice of a large lemon . The lemon juice adds the tangy and fresh flavour to the Piccata sauce. 

 

  • Butter–  The butter adds the creaminess to the sauce. It could be replaced with an alternative . Or just plain old Olive oil.

 

  • Chicken Stock-  Chicken stock is used to get more flavour in the sauce . A cup of white wine is also added to the traditional recipes. 

 

 

Instructions on making the Most delicious and healthy Chicken Piccata.

 

  • Select Sauté mode on your Instant pot. Add the Oil to the inner pot. If the Chicken Breasts are really big you would want to pound them with a meat pounder to flatten them a little.And add them to the hot oil.

  • Sprinkle the seasoning onto the Chicken . The garlic salt, Pepper, Dried parsley flakes, Salt. The chicken needs to be seasoned well. Make sure to nicely coat the chicken .

  • Flip the Chicken breasts so as to get even colour on the Chicken breasts. 

  • Next its time to add the Chicken stock. the Chicken stock could be store bought or homemade. Either ways try to use a Low sodium version. The Capers used in the sauce are  Brined , so there is going to be enough salt in the dish. You do not want it to be salty.

  • I used the Pot -in -pot method to make to the rice at the same time. Place a trivet in the pot. A heat resistant bowl containing 1:1 rice to water ratio is placed on the trivet.

  • Cancel Sauté mode. Close the lid of the Instant Pot. Cook the Chicken Breasts and Rice at High pressure for 10 minutes. Sealing mode .

  • After natural pressure release, Open the lid and remove the perfectly cooked rice bowl. 

    Also remove the Chicken breasts from the Inner pot. Place them in a bowl and cover with aluminium foil to seal in the juices.

  • To make the Sauce. Select sauté mode again. To The Juices from the chicken and the leftover chicken stock add a dollop of butter. Lemon juice and whisk it all together.

  • Cancel Sauté mode. The sauce is ready. Strain and generously drizzle over the Cooked Chicken Breasts. Add Capers and freshly chopped parsley . 

  • Serve it hot with Rice, Cauliflower mash, Cauliflower rice or Spaghetti. Enjoy an easy Yummy Lemony Caper loaded Chicken Piccata.

 

Instant Pot Chicken Piccata

 

Pro tips:

 

  • I have made a low cal , Gluten free version of Chicken Piccata without using any kind of flour.

  • You could however use Corn starch , potato starch. ( about 1/2 cup to dredge).

  • A cup of White wine is what is traditionally added along with the  Chicken stock.

  • I like to add capers in the end as a garnish. You can also add it to the sauce.

Ingredients

  • Boneless Skinless Chicken Breasts- 1 1/2 lbs (About 3 pieces)
  • Olive oil- 1/4 cup
  • Garlic salt- 1 tsp
  • salt-1/4 tsp
  • Pepper- 1 tsp
  • Dried parsley- 1 tsp
  • Chicken Stock- 1 cup
  • For the rice :
  • Rice- 1 cup
  • water- 1 cup
  • for the sauce:
  • Butter- 1/4 cup
  • Lemon Juice- 1/4 cup
  • Capers- 2 tbsp
  • fresh parsley for garnish

Instructions

    1. Select Sauté mode on your Instant pot.
    2. Add the Oil to the inner pot.
    3. Add The Chicken breasts to the hot oil.
    4. Sprinkle the seasoning onto the Chicken.
    5. The garlic salt, Pepper, Dried parsley, Salt.
    6. Flip the Chicken breasts so as to get even colour on the Chicken breasts. 
    7. Next the Chicken stock.

    10. Natural pressure release.
    11. Open the lid and remove the perfectly cooked rice bowl
    12. Also remove the Chicken breasts from the Inner pot.
    13. Place them in a bowl and cover with aluminium foil to seal in the juices.
    14. To make the Sauce. Select sauté mode again.
    15. To The Juices from the chicken and the leftover chicken stock add a dollop of butter. Lemon juice and whisk it all together.
    16. Cancel Sauté mode. The sauce is ready. Strain and generously drizzle over the Cooked Chicken Breasts. Add Capers and freshly chopped parsley . 
    17. Serve it hot with Rice, Cauliflower mash, Cauliflower rice or Spaghetti. Enjoy an easy Yummy Lemony Caper loaded Chicken Piccata.
