  • Onions: A sweet yellow onion, red onion , shallots. This recipe is a wonderful medley of sweet, sour, tangy . It also has a mild kick to it. If you always have yellow onions in your pantry then yellow onion it is. I have used red onions diced into cubes .

 

  • Peppers: Red , yellow, green. What ever your heart desires. Use a blend of colours . the peppers give colour as well as the added layer of freshness to this Instant pot Hawaiian Chicken. I sometimes use whatever is at home in my refrigerator .

 

  • PineappleThe Pineapple , Fresh is always better . just cut into chunks . It has a bite to it. However, if we are in a season with no fresh Pineapple on the supermarket rack, don’t be disheartened. We can also use Pineapple Chunks canned in the Juice refrain from the ones that are loaded with sugar. so the ones in Syrup can be avoided. But again , hey have fun making the dish. Just don’t eat or add extra sugar .

 

  • Ginger and Garlic: These aromatics are absolute necessity . Fresh , minced, or ready packaged. Use what you have. However the freshly grated ginger and garlic can beat none of the packaged and preserved.

 

  • Chicken: Free range ,antibiotic and hormone free Chicken Breasts is what i use in most of my meals at home or otherwise. The reason is ;being a microbiologist i have come to realise anything in excess especially the hormones and antibiotics cause more harm than good.

The Instant Pot Hawaiian Chicken made in the pressure cooker or the Instant pot is the easiest meal  to be made . The recipe is almost dump and go kind of recipe. You just add , sauté and pressure cook.

Absolutely ! This Instant pot Hawaiian Chicken can be made on the stove top. The recipe is easy if cooked over the stovetop too.  

 

  • Sauté the Onions and pepper in oil. You could just add in the onions, peppers in oil and leave them for a bit to make sure that they are soft. 

  • Cook them down a bit . A dump and go kind of Instant Pot Hawaiian Chicken recipe .

  • Add the chicken and cover the pan with a lid. This would normally take around 10 to 15 ,minutes . The juices run clear and after the chicken is cooked add the Pineapple and the seasoning along with the sauces.

  • Add water to make the sauce, and stir in the gluten free Tapioca starch to thicken.

Pro tips-

  • The Instant Pot Hawaiian Chicken can be made without heat. Simply skip the Sriracha sauce , you could add sweet paprika for colour.

  • You could use canned  Pineapple instead of fresh Pineapple.So you could make it any time of the year.

  • Its a freezer friendly recipe. I just simply add the peppers on the day I am using the Chicken, so i do not have soggy freezer peppers.

  • Tomato Sauce is used you could also use Tomato Ketchup, also you could add honey to the recipe .

  • Any Gluten free Starch can be used to thicken the sauce, however use very small quantity, you do not need lumpy sauce.

Ingredients

  • Oil- Any neutral oil like canola- 2 tsp
  • Onion - Red or yellow Diced - 1/2 Cup
  • Medley of mixed peppers diced 2 cups
  • Chicken - cut into cubes -2 cups
  • Pineapple Chunks- 1 cup
  • Salt-1/2 tsp
  • Pepper crushed- 1/2 tsp
  • Tomato ketchup- 2 tbsp
  • Sriracha Sauce-1 tbsp
  • Water-1/2 cup
  • GF Starch (i used Tapioca)-2 tsp in 1/4 cup water (cold water)

Instructions

    1. Begin with using the Sauté mode in the Instant pot/  electric Pressure cooker.
    2. Next you add any neutral oil to the inner pot once the pot signals .Sauté the Onions, peppers (yellow, red, green)  Cover with a glass lid to obtain a quick sautè .
    3. Add the Chicken pieces, at this point i like to separate the pieces into cubes by just using the spatula.
    4. Now add the Pineapple chunks. seasoning , sauces, and about half a cup of water.
    5. Cancel the sauté mode and Pressure cook on High for 10 minutes . release the pressure. Do not wait for natural release at it adds another 5 to 7 minutes.
    6. Thicken the Amazingly delicious Hawaiian chicken with a slurry of gluten free Tapioca or any starch you have in your pantry.
    7. Serve Over steamed rice or gluten free ramen. 

Notes

A lot of recipes talk about adding soy sauce, pineapple juice, Tomato puree. I like to keep mine simple, yet flavourful .No Chinese sauces, no extra added sugary syrups unless its fresh, and tomatoes a big ' No'
