I make a lot of curries in my kitchen using pantry staples and My Instant pot. There are curries made with Yogurt base, Coconut milk, Grated Coconut.

Ingredients of Curried Chicken in Instant pot .

 

Chicken : The recipe can  be made using  bone-in as well as boneless chicken. 
 I generally prefer to make it using chicken Thighs/ breasts cut into cubes as my little one loves the meat without bones. But, I have made this Curried Chicken with Chicken Thighs , however  bone in curry cut  chicken also tastes delicious . So do not stress use whatever you have at hand.
 Chicken Thighs and Chicken legs work extremely well.

 

Onions : Either sliced, chopped or ground to paste. This particular recipe i have used onions finely chopped.
Whatever you use, that’s fine! However, finely chopped or grated onions works great.

 

Tomatoes: Again like mentioned, tomatoes can be used Chopped, puréed , canned , homemade. Just do not stress. Like i said, this recipe is very forgiving and you is made with Staples from the Pantry.

 

Cashew Paste: Its a key Ingredient in this recipe.  Cashew paste can be made by  Soaking 1/4 cup Cashews in 1/2 cup water and then grinding to a paste in a  grinder. You could replace it with fresh cream, Yogurt . The cashew paste particularly gives a creamy nutty taste .

 

 

Ginger and Garlic mincedYou could very well use dry powders or store bought paste to  replace. I made a paste at home with around 2 inch ginger and 6 cloves of Garlic in a mixer. no water added while grinding.

 

Clarified butter or GheeThis is an important ingredient as it is needed to sauté all the onions, garlic and tomatoes. You could use oil too. The tastes of Ghee makes the dish rich .

 

Dry Spices :

 

Chilly powder – Using Kashmiri chilly powder as it adds a deep red Colour to the Curried Chicken . Omit the Chilly powder completely and you can add sweet paprika or Cayenne pepper too.

 

Turmeric Powder : Found in most of the Indian and Arabic dishes, this has anti bacterial properties. Easily available at leading Grocery stores or online portals. 

 

Garam masala : Incase you do not have This spice blend , you can very well use All spice powder, curry powder. Garam masala is available in leading grocery stores and online around the world.

 

Coriander powder: This  powder is essentially ground coriander seeds . Likewise its available across the world easily online as well an in grocery stores.

 

Cumin powder: Just adds a touch of smoky flavour to the dish.

 

Whole Spices : Cinnamon Stick, Cardamom, Clove .

Instructions on making the Curried Chicken In Instant Pot.

 

This easy Curried Chicken In Instant Pot  recipe is made with pantry staples and in the Instant pot. You can find detailed measurements and instructions in the recipe card below. Please find a gist of the same here.

 

  • Start by Switching on the Instant Pot On Sauté mode.
  • When the inner pot gets hot, Add Clarified butter /ghee to the inner pot.
  • Next  the whole spices  and let the aromatics release the aroma.
  • Its now turn to add Ginger garlic paste (mince) and sauté for about 30 seconds.
  • Now add the Chopped onions and cover with a glass lid to make sure that the onions turn translucent.
  • Next add all the dry spice masala . The chilli powder can be replaced by cayenne , or sweet paprika. Coriander powder, Garam masala ( can be replaced  use All spice powder or Curry powder). turmeric powder and salt.
  • After a quick stir , add the tomatoes . I have used homemade tomato Purée you can very well use store bought can , or even chopped tomatoes.
  • Give it a quick Stir  and add the chicken pieces to this mix. As mentioned earlier you can use the choice of chicken ( Leg, Thighs, Boneless ).
  • Add Just 1/2 a cup of water . Cancel Sauté mode and close the lid of instant pot. Pressure cooker on high for 10 minutes.
  • After natural pressure release open the lid of Instant pot and garnish with Cilantro leaves.
  • Its now that you add the Cashew paste that is made using 1/4 cup of cashews and 1/2 cup  warm water soak for about 1 hour. Grind the cashew along with the water to a fine paste.

 

Pro tip to make Curried Chicken In Instant Pot.

 

  • This Curried chicken instant pot recipe can be made with boneless Chicken or bone in Chicken. You could use either .
  • Chicken chunks can be marinated. Marinate the chicken in yogurt or lemon.
  • Instead of Garam masala use Ground All Spice powder  Curry powder.Do not over cook the chicken .
  • Just 10 minutes of pressure cooking , with natural release give succulent tender chicken.

  • Curry Cut Chicken - 2 pounds
  • Ghee / Clarified Butter - 2 tbsp
  • Whole cardamom pods- 2 to 3
  • Clove - 3 to 4
  • Cinnamon sticks inch pieces 2
  • Onions chopped- 1 cup
  • Tomatoes Chopped / Purée -1 cup
  • Chilli powder-2 Tsp ( you could increase the heat if you like)
  • Garam masala powder- 1 tsp
  • Coriander powder- 2 tsp
  • Turmeric Powder- 1/4 tsp
  • Salt- 1 tsp
  • Water- 1/4 -1/2 cup (depending on the desired consistency
  • Cashew paste- 1/4 cup

Instructions

    13. 1/4 cup of cashews and 1/2 cup luke warm water soak for about 1 hour. Grind the cashew along with the water to a fine paste.

Notes

  • This Curried chicken can be made with boneless Chicken or bone in Chicken. You could use either .
