To get the Best Creamy Easy Coconut Rice-3 Ingredients , you need to use Full fat Coconut Milk . You could make your own which is quite a tedious process (grinding the coconut flesh with water , straining it , regrinding to get the desired consistency) or you could use Organic Full fat coconut milkSo you could use Coconut milk and not cream.

I Love this recipe personally as rice is a staple in our Indian homes but variation is what adds spice to everyday food. Rice is always the easiest cooked with the right measurements .
To avoid get clumpy, soggy or uncooked rice. You do not have to worry about the mess , or constant stirring or baby sitting when you make the Easy Coconut Rice . You just need Coconut Milk ( Unsweetened) Jasmine rice, Salt and a little bit of water.
What kind of Rice is best for This Easy Coconut rice 3 Ingredients ?
I have always made this recipe with Jasmine rice , however you can use any Rice from the pantry. Like Fragrant Basmati Rice Medium grain rice, or rather any rice works very well with this recipe. I have even made this recipe using Brown Rice. It turns out wonderful.

Its a very easy Recipe, No spill and made with only 3 Ingredients. A detailed printable recipe card can be found at the end of the post. A summary is here for your reference.

Rinse – rinse the Jasmine Rice well under tap water Until the water is clear and Soak it for about 1/2 hour .Drain the water after 1/2 hour . When ready to cook.

Coconut milk – The Coconut milk like I mentioned earlier could be either homemade or store bought . I just like to use thick coconut milk as I also add water to the recipe. This Kind of prevents any burn that usually happen when only Coconut cream is used . The Rice would get stuck to the bottom in the event of lack of liquid.

Switch on the Instant pot in pressure cook mode . Add the Washed , Rinsed and soaked rice to the Inner Pot. Next add the Unsweetened Coconut Milk.

Its now that you stir in and add Water . I use water instead of stock (the stock has flavours that might not compliment the Creamy Coconut Flavour).

Add a little bit of salt . Adding Salt to the rice and Coconut enhances the flavours of Coconut.

Stir all the Ingredients well. Then Close the lid of the Instant Pot and keep the valve on Sealing and pressure cook for 3 minutes. After the cooking is done let the instant pot depressurise naturally . This takes 7 to 8 additional minutes . let the Floating valve drop completely .Wait for additional minute and then Open the lid .

The easy Coconut Rice can be made without soaking the Rice . However i like the soft creamy texture it brings out . You could opt out and use only rinsed rice.

Coconut milk – you could use unsweetened coconut milk nonetheless using coconut cream should be avoided.

I also add water to the Rice so try and use the full fat milk and not the watered down varieties available in the market.

We sometimes just like to eat the Coconut rice warm with a number of sauces like Sweet chilly sauce. Thai peanut sauce Togarashi Seasoning, toasted Sesame seeds. The warm rice tastes heavenly with these accompaniments too!
