This french classic also known as Ratatouille Niçoise takes Hours to slow cook for the right consistency. My twist here to get it as close to the Original while making it in the Instant pot. So”Bon Appétit”.

Instant pot Ratatouille – a French Classic originated in the 1800’s is a vegetable stew with a tangy flavour of tomatoes ,garlic and fresh basil. This rustic Soul warming dish is full of flavour and nutrition. If you have never had the chance to eat this stew in Paris , recipe is the one that you should try.
On our Visit to Paris in the Summer of 2014 , we had the taste of this yummiest in a restaurant ‘ ‘Vaudeville‘. I am making a version of this delicacy.
This Instant pot Ratatouille is made under 30 minutes. Normally it takes hours to slow cook the vegetables tender, Almost creamy texture.
What are the main ingredients in the Instant Pot Ratatouille?
Popularly known as the poor man’s stew, however in recent times this dish has been prepared by Top Chefs and been served in the finest restaurants around the world.
Ratatouille can be served Hot or Cold , as an Antipasto , salad or a side. It could be a partner dish with fish, chicken , steak.
The main Ingredients Include Zucchini, Eggplant , Tomatoes and peppers.
Now a days a few Michelin Star Chefs have elevated the Traditional Ratatouille and made it into a wonderfully plated and tasting dish.
Ratatouille In Provence is made traditionally on the Stove top.
Each vegetable is cooked separately till its nice and tender. cooked in Olive oil, garlic and minimal herbs.In the end all the vegetables are combined together in a tomato sauce, simmered to perfection to get a luscious creamy vegetables .
We here are replicating the same Provencal Stew by cooking it in the Instant Pot, making it a quick meal for entertaining or a weeknight supper.

What are the Ingredients used in the Instant pot Ratatouille?

Olive oil– The vegetables are simmered in this beautiful oil . Tossing the vegetables lightly in oil , helps us achieve those delicious caramelised edges. The Instant pot ratatouille needs a good olive oil.

Fresh tomato Puree: key for making Ratatouille that tastes fresh and lively, not dull and heavy. I puréed the tomatoes in the food processor along with 1/2 a cup of water or vegetable broth and cook them with onion and garlic to make an irresistible tomato sauce. You can use store bought Purée too.

Vegetables: Eggplant , This vegetable cooks so easily in the instant pot. Zucchini ,yellow Squash.I love the visual combination of green zucchini and yellow squash.Bell Peppers .Take your pick from red, orange or yellow bell pepper.Use array of vegetables. But these are the vegetables of choice for Ratatouille.

Seasoning: Fresh basil chopped or torn adds a tonne of freshness to the Ratatouille. Dried thyme or oregano can also be added to the dish .
Instructions on making the Ratatouille in Instant pot/ Stove top
The Provençal stew was traditionally made on the stove top, simmering the vegetables till they are tender and creamy. We are making a quick Instant pot version of the same. retaining the taste and texture , the Instant pot makes it a quick yet delectable weeknight meal.
To make the ratatouille in the Instant pot:

Switch on the Sauté mode of the Instant pot. When the inner pot is hot , add the olive oil to the inner pot.

To this add the garlic mince and Chopped Onions . Sauté for a minute to get the aromatics to release the flavours.

Next add the Chopped vegetables, Like the red , yellow peppers, Yellow squash, Zucchini. Sauté again to get the vegetables to soften up a bit.

To this mix , add the eggplant. It is said that the eggplant is a tough vegetable to cook. So sauté a bit longer.

Next add the seasoning. I like to add whatever dry herbs are lying in my pantry. Oregano,Thyme etc. You could even skip the herbs. Add salt and pepper. Season well.

Now add fresh tomato pureé or chopped tomatoes. Alternatively you could use canned tomatoes too.

Now cancel the Sauté mode. Add some fresh basil (i like to add it here , gives a rich aroma ). Close the lid of Instant pot and seal the pressure in . Pressure cook on high for 7 minutes. This helps soften the vegetables.

Release the pressure manually. Add more fresh basil and serve the Ratatouille with Rice, Bread, pasta. We love this Provençal vegetable stew. The best Instant pot Ratatouille.
Making the Instant Pot Ratatouille on the stove top:
To make the Ratatouille on the stove top, Use a Heavy bottom pan.

Follow all the above steps of Instant pot recipe, till the step of pressure cooking. Instead , close the lid pf the pan and let the vegetables simmer on low flame for 25 minutes, or till the veggies are tender and creamy.

Since eggplant take a while to cook, this step takes longer.
Pro tips-

While using store bought tomato purée please ensure to add 1/2 cup of liquid to the instant pot. (this will help prevent burns)

Do not use Tomato paste , it does not have any liquid.

I cooked the Instant pot Ratatouille for 7 minutes. I also tried a 5 minutes version. The 7 minutes is smooth , thoroughly cooked veggies. We like it this way, the 5 minutes is a firmer texture.

Ingredients
- Olive oil- 3 tbsp
- Onion- Chopped- 1/2 cup
- Red Pepper - Diced 1/2 cup
- Yellow pepper- Diced- 1/2 cup
- Yellow Squash- Diced- 1/2 cup
- Zucchini -Diced- 1 cup
- Eggplant - Diced- 1 cup
- Tomato Pureé- 1 1/2 cup
- Salt- 1 tsp
- Pepper-1/2 tsp
- Fresh basil leaves- handful (depending on your love for basil)
